Low-sugar Blueberry Bars or Cookies
- 1 cup each: ground oats, flour, shredded coconut, blueberries or cranberries
- 1/2 cup flaxseed and/or sliced almonds
- 1 tsp. baking soda, 3 tsp. baking powder
- Mix dry ingredients.
- Beat together 1/2 cup olive oil, 2-3 eggs, and 2 cups applesauce.
Combine wet and dry ingredients. Add enough water to make a moist, stable dough. Bake 25 min. at 350° F in a greased baking dish, cool and cut into bars; or for cookies dab tablespoons of dough on a greased cookie sheet and bake as needed, about 10 min.
